Grown Up Mac and Cheese

Well, we're officially barefoot bloggers now. This month, the first recipe is for Ina's Grown Up Mac and Cheese. Now, I know she isn't exactly known for health food, but I simply love to watch her cook anyways. We made a few modifications to the recipe to cut it down to a healthier dish, but I think we were pretty true to the flavors. We used reduced fat cheese, center cut bacon, and cut the portion size in half. In addition, neither of us really like bleu cheese. That is to say, we can't stand the stuff! It just had to go...

The results were absolutely wonderful! We left the table contemplating Mac 'n Cheese variations for the next time; gouda, pepperjack, and brei... oh my! We didn't really feel that the roux was a good idea, and will use arrowroot next time. The bread crumbs on top were a great touch, but the basil was lost. This has been a problem before for us, our fresh basil just seems to be a bit weak. We will probably substitute in some dried herbs instead.

Amy, fresh from her first business trip, supplied the vino. We've been wanting to try two-buck-chuck for a while, but we're well out of range of a Trader Joe's. Luckily, there just happened to be one where Amy had commuted. She picked up some Sauvignon Blanc and a Merlot. The verdict on the white? It was definitely wine.
